Hainanese Chicken Rice Recipe

Hainanese chicken rice is an absolute comfort food. This needs just basic ingredients but the flavours are spot on. The rice itself has lots of flavour.

Ingredients

  • 2 Chicken Legs
  • 1 cup Rice
  • 1 tbsp oil
  • 1 tbsp Ginger chopped
  • 1 tbsp Garlic chopped
  • 2 Spring onion chopped
  • 1 Green Chilli chopped
  • Salt to taste
  • Pepper to taste
  • 3 cups Chicken Stock
  • Spring onion for garnishing

FOR GINGER SAUCE:

  • 6 Dry Red Chilli
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • Salt to taste
  • 2 tsp Sugar
  • 4 tbsp Vinegar

Instructions

  • Heat oil in a pan. Add in ginger, garlic, chillies and spring onion. Saute for 2 mins.
  • Add in chicken and season with salt and pepper.
  • Cook till both sides is seared.
  • Now add in chicken stock and bring it to a boil. Cover and cook till chicken is done. Remove chicken to a plate.
  • Strain the stock.
  • Take it back in the pan, add rice and mix well. Cook for 3 to 4 mins.
  • Add in chicken and cover it and cook on lowest heat possible for 10 to 15 mins.
  • Serve.
  • For chilli sauce. Soak chillies in hot water for 10 mins. Add it in blender along with all ingredients and grind.
  • Serve with rice.

Notes

  • Make sure you use bone-in chicken for getting a flavourful chicken broth.
  • If you can remove the chicken skin and render the fat from it in a pan and fry the rice in it to get maximum flavour.
  • You can use store bought chicken stock or use stock cubes for instant version.
