Kari Choru Recipe | Erachi Choru Recipe

Kari Choru or Mutton Rice is a favorite keralan delicacy. It is typically made with beef but i tried it with mutton and it was delicious.

Ingredients

  • 1 kg Mutton
  • 4 cups Basmati Rice
  • ¾ kg Onion
  • 4 Tomato
  • 6 Green Chillies
  • 3 tbsp Ginger Garlic Paste
  • 2 tbsp Chilli powder
  • 2 tbsp Garam masala powder
  • ¾ cup Mint Leaves
  • ¾ cup Coriander leaves
  • 1 cup Curd
  • Salt to taste
  • 2 tbsp Coriander Powder
  • 2 tsp Turmeric Powder
  • 2 tbsp Ghee
  • 10 Cardamom
  • 5 piece Cloves
  • 1 stick Cinnamon
  • 1 Star anise
  • 2 tsp Fennel seeds
  • 2 tbsp Coconut Oil
  • 8 cups Water

Instructions

  • Soak basmati rice for 30 mins.
  • Chop onions in a food processor. Chop tomato, mint, coriander, green chillies in a food processor.
  • Take mutton in a pressure cooker. Add onions, tomato mix, curd, ginger garlic paste, salt and spice powders. Mix well. Add coconut oil and mix well.
  • Pressure cook this for 5 to 7 whistle. Once mutton is cooked, drain the liquid from it.
  • In a separate biryani pot, heat ghee and add whole spices.
  • Add in the stock, extra water and exta chilli power, salt and gaam masala powder.
  • Once this comes to a boil. Add in drained rice and cook till rice is 50 percent done.
  • Now add in the drained mutton and mix well.
  • Cover and cook on medium low heat for 10 to 15 mins.
  • Turn off the heat and let it sit for 30 mins.
  • Now fluff up the rice and serve.

Notes

  1. The total water content should be 1:2. For 1 cup rice you need 2 cups water. You can reduce the water to 1.5 cup too.
  2. You can make it with chicken instead of mutton. For chicken you dont have to pressure cook. Just add it in the pot and cook for 15 mins and then add water and rice.
  3. This rice is not like biryani, it has so much flavour and the rice is little soft than biryani.
  4. This can be served with raita and papad.
