Ingredients
▢
Zucchini - 2 chopped
▢
Carrot - 1 chopped
▢
Potato - 2 chopped
▢
Capsicum / Bell Pepper - 12 cubed
▢
Garlic - 10 cloves
▢
Olive Oil - 3 tblsp
▢
Salt to taste
▢
Black Pepper to taste
Instructions
▢
Cube veggies and add to a baking tray.
▢
Drizzle with oil, salt and pepper and mix well.
▢
Pop this in a preheated oven for 45 mins at 200 degree C.
▢
Remove and serve.
