Roasted Veggies Recipe

Healthy roasted veggies which not only taste amazing but is highly nutritious as well. This is so delicious on its own or as a side for grilled chicken.

Ingredients

  • Zucchini - 2 chopped
  • Carrot - 1 chopped
  • Potato - 2 chopped
  • Capsicum / Bell Pepper - 12 cubed
  • Garlic - 10 cloves
  • Olive Oil - 3 tblsp
  • Salt to taste
  • Black Pepper to taste

Instructions

  • Cube veggies and add to a baking tray.
  • Drizzle with oil, salt and pepper and mix well.
  • Pop this in a preheated oven for 45 mins at 200 degree C.
  • Remove and serve.
