Preheat oven to 180 degree C. Line a square baking pan with parchment and set aside,
Mix brown sugar, egg, oil and vanilla in a bowl and mix well. Set aside.
Sift together flour, cinnamon, salt, baking powder and ginger. Add in carrots and walnuts and mix well.
Add in the sugar mix and fold gently.
Spoon this into baking pan and bake for 25 to 30 mins.
Remove and cool completely. Slice and serve.
