Ingredients

Quinoa - 1 cup
▢
Water - 2 cups
▢
Oil - 2 tsp
▢
Mustard Seeds / Kaduku - 1 tsp
▢
Urad dal / Ulundu Paruppu - 1 tsp
▢
Asafoetida / Hing / Kaya Podi - a pinch
▢
Cumin Seeds - ½ tsp
▢
Black Pepper - 1 tsp
▢
Dry Red Chilli - 2
▢
Curry leaves a sprig
▢
Turmeric powder - 1 tsp
▢
Lemon Juice - from 1 lemon
▢
Salt to taste
Instructions
▢
Cook quinoa in 2 cups of water or as per package directions. Fluff it and set aside to cool.
▢
Heat oil in a nonstick pan. Add all seasoning ingredients and let it sizzle.
▢
Add turmeric powder, salt and mix well. Add lemon juice and mix well.
▢
Add cooked quinoa and mix well.
▢
Stir fry for few mins.,
▢
Serve.
