Take carrot and beans in a pan, add salt and little water. Cover and cook for 10 mins. Set aside.
Take shallots, garlic, chilli powder, turmeric powder and grind it into coarse paste.
Heat oil in a pan, add mustard, urad dal and curry leaves and let it sizzle.
Add in the ground masala. Saute for a 2 to 4 mins.
Add in carrot and mix well. Season with salt.
Cook together for 5 mins.
