Strawberry Muffins Recipe

Delicious fluffy strawberry muffins which is fluffy vanilla flavoured cake with dots of strawberries all over it.

Ingredients

  • 2 cups All Purpose Flour / Maida (240 grams)
  • 1 cup Sugar (200 grams)
  • ½ cup Unsalted Butter (120 grams)
  • 1 tsp Vanilla Extract
  • 2 Large Eggs
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Milk (120 ml)
  • 1 cups Strawberries chopped

Instructions

  • Preheat oven to 190 degree C.
  • Line 12 cup muffin pan with cupcake cases.
  • Take butter, sugar, vanilla in a bowl and beat using a electric beater till creamy and light.
  • Add in one egg at a time and beat till creamy.
  • Now add in flour, baking powder, salt and use a beater to mix.
  • Add little milk at a time and beat till creamy.
  • Add strawberries and fold gently.
  • Now use ice cream scoop to scoop the batter into muffin cups.
  • Top with some chopped strawberries.
  • Now pop this in oven and bake for 30 mins.
  • Remove and serve warm.

Notes

  1. Cream butter and sugar till fluffy and light for moist cupcakes.
  2. You could use any fruits as you like. Options are endless.
  3. Add little almond extract for more flavour.
  4. I used vanilla powder instead of vanilla extract. 
  5. You can add chopped nuts of any dried fruits instead of muffins.

VARIATIONS YOU CAN MAKE

  1. Use any fruits like raspberry, blueberries, blackberries, apples, pears or chopped bananas.
  2. Use chopped nuts like almonds, walnuts, cashews.
  3. Add dried fig, dates, apricots, cranberries.

STORAGE

You can store baked muffins in freezer for upto a month and thaw it in fridge overnight. You can warm them in microwave or oven when needed.
You can store baked muffins at room temp for up to 2 days.
You can store in fridge, upto a week.
