Mapo Tofu Recipe | Mapo Tofu with Chicken

Mapo Tofu is a popular dish from the sichuan province which has a spicy oily red sauce coated over minced meat and delicate tofu pieces. Making Mapo tofu at home is easy and comes together in less than 20 minutes which makes it a great weeknight family dinner dish. Ingredients

  • 200 grams Soft Tofu (Use Silken Tofu)
  • 1 tsp Salt
  • Warm water

For Mapo Tofu Sauce

  • 3 tbsp Chilli Oil
  • 3 piece Dry Red Chilli
  • 4 tbsp Garlic Minced
  • 2 tbsp Ginger Minced
  • 250 grams Minced Chicken
  • 2 tbsp Chilli Bean Paste
  • 2 tsp Soy Sauce or to taste
  • 2 tsp Sugar or to taste
  • 1 tsp Vinegar or to taste
  • to taste Salt
  • 2 cups Chicken Stock

For Cornstarch Slurry

  • 1 tbsp Cornstarch
  • 3 tbsp Cold Water

Mapo Tofu Finishing Touches

  • 1 tsp Ground Sichuan Peppercorn
  • 2 Piece Green Onion
  • 1 tsp Toasted Sesame Oil

Instructions

  • Mix cornstarch with water to a form a slurry. Set aside. Cut tofu into cubes, take them in a bowl. Sprinkle with a tsp of salt and cover them with hot water and set aside.
  • Heat chilli oil in a wok. Add in dry red chilli and fry for a minute. Add in minced ginger and garlic and fry on low heat for 30 seconds. Add in ground chicken and stir fry with little salt till it is cooked. Keep mixing so it gets crumbly.
  • Now add in chilli bean sauce and stir fry for a minute. Add in soy sauce, sugar and vinegar and stir well. Pour chicken stock and mix well. Bring it to a boil. Add in tofu cubes and mix well. Simmer for two minutes. Slowly drizzle in the cornstarch slurry and mix till it thickens.
  • Finally add in sichuan pepper, chopped green onions, toasted sesame oil and serve with rice.

Notes

  • Use soft tofu or silken tofu for best result. But firm tofu can be used as well.
  • If you cannot find chilli oil, heat some oil in a pan, add in chilli flakes in the oil and turn off the heat. Drain it. Now you have homemade chilli oil.
  • If you don't have chilli oil, use normal oil.
  • Instead of ground chicken, you can use ground pork too.
  • Sichuan pepper is quite strong, start by adding little, then add more.
  • Mapo tofu can be served with plain rice or fried rice.
  • Add tofu in the end, so it doesn't crumble.
  • Be delicate when mixing mapo tofu after adding tofu.
