Coq Au Vin Recipe

Coq au vin is a french chicken and wine dish which taste so delicious with some rice or mashed potatoes.

Ingredients

  • 500 grams Chicken
  • 3 tbsp Oil
  • 1 tsp Paprika
  • 1 large Onion chopped finely
  • 1 large Carrots chopped
  • 15 Shallots peeled
  • 200 grams Mushroom sliced
  • 1 tbsp + 2 tbsp Butter
  • 2 tsp Dried Thyme
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp All Purpose Flour / Maida
  • 1 cup Chicken stock
  • 1 cup Red wine

Instructions

  • Take chicken in a plate, season both side with paprika, salt, pepper and dried thyme.
  • Heat oil in a dutch oven. Place chicken in a single layer and sear both sides till golden. Remove and set aside.
  • Now add in onions, carrots, garlic in the same pan. Saute for 2 mins.
  • Add in chicken, chicken stock and red wine. mix well.
  • Bring it to a boil. Cover and simmer till chicken is cooked.
  • Now mix flour with 2 tbsp butter to a paste. Add it into the chicken and mix well.
  • Saute shallots and mushrooms in butter for 2 to 3 mins.
  • Add the vegetables into the chicken and mix well. Simmer for 5 mins.
  • Serve with rice or mashed potatoes.
