Vegetable masala khichdi is a rice and dal dish combined with lots of vegetables and masalas which taste so good.

Ingredients

  • 2 tbsp Oil | Ghee
  • 1 piece Cinnamon
  • 1 tsp Cumin Seeds
  • 1 medium Onion chopped finely
  • 4 cloves Garlic chopped
  • 1 tbspn Ginger chopped finely
  • ½ cup Peas
  • 1 large Potato peeled and chopped
  • 1 large Carrot chopped
  • 1 large Tomato chopped finely
  • ¼ tsp Asafoetida / Hing / Kaya Podi
  • 1 tsp Chilli Powder
  • 2 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala powder
  • Salt to taste
  • 1 cup Rice
  • ½ cup Yellow Moong Dal
  • 5 cup Water

Instructions

How to Make Masala Vegetable Khichdi in Pressure Cooker

  • Wash and soak rice and dal together.
  • Heat oil or ghee in a pressure cooker, add cumin and cinnamon.
  • Add onions, ginger and garlic and saute for a min.
  • Add in tomatoes and mix well.
  • Add in asafoetida, spice powders and mix well.
  • Add veggies and toss well.
  • Add in salt and water and mix well.
  • Add soaked rice and dal and bring it to a boil.
  • Cover the pressure cooker and cook for 2 whistle. Turn the heat to low and cook for 5 mins. Turn off the heat and let the steam all escape by itself. Open the cooker and fluff the rice.
  • Serve with raita.

How to Make Masala Vegetable Khichdi in Instant Pot

  • Wash and soak rice and dal together.
  • Set instant pot to saute mode.
  • Heat oil or ghee add cumin and cinnamon.
  • Add onions, ginger and garlic and saute for a min.
  • Add in tomatoes and mix well.
  • asafoetida, spice powders are added and mixed well.
  • mixed veggies are added and toss well.
  • Add in salt and water and mix well.
  • Soaked rice and dal is added and bring it to a boil.
  • Cover the instant pot and set pressure cook for 10 mins. Let the pressure release by itself. Open and mix well. Add extra ghee if needed.
  • Serve with curd and papad.
