Eggless Fruit Cake Cupcakes Recipe

Eggless Fruit Cake Cupcakes is bite size fruit cakes shaped like cupcakes. This makes a perfect gift for christmas.

Ingredients

  • Unsalted Butter - ¼ cup 50 grams
  • Brown Sugar - ½ cup 100 grams
  • Vanilla Essence - 1 tsp
  • Orange Juice - 2 tblspn
  • Yogurt / Curd - 2 tblspn
  • All Purpose Flour / Maida - 1 cup 120 grams
  • Baking Soda / Cooking Soda - ½ tsp
  • Baking Powder - ½ tsp
  • Cinnamon Powder - ½ tsp
  • Dried Fruits - ¾ cup soaked

Instructions

  • Preheat oven to 180 degree C. Prepare a muffin pan by lining it with cupcake wrappers and set aside.
  • Take butter, sugar and vanilla in a bowl and cream well.
  • Add in yogurt and orange juice and mix well.
  • Add in soaked dried fruits and mix well.
  • Add in flour, cinnamon, baking soda and baking powder and fold gently.
  • Use a icecream scoop to scoop the batter into the moulds.
  • Bake it for 20 to 25 mins. Insert a toothpick to check whether the cake is done or not.
  • Now remove it and cool completely.
  • Serve.
