Ingredients
▢
Oil - 4 to 5 tblspn
▢
Mustard Seeds / Kaduku - 1 tsp
▢
Urad dal / Ulundu Paruppu - 1 tsp
▢
Fenugreek Seeds / Vendayam / Methi - ¼ tsp
▢
Curry leaves a small handful
▢
Shallots / Sambar Onion - 10 peeled
▢
Tomato - 1 large chopped
▢
Brinjal - 2 chopped
▢
Salt to taste
▢
Turmeric Powder - 1 tsp
▢
Chilli Powder - 1 tblspn
▢
Coriander Powder - 2.5 tblspn
▢
Jaggery or Sugar - 2 tsp
▢
Tamarind - 1 lemon size
▢
Water as needed
Instructions
▢
Soak tamarind in water for 10 mins. Squeeze and extract the pulp.
▢
Heat oil in a pan, add mustard, urad dal, fenugreek and curry leaves.
▢
Add in shallots, brinjal and tomatoes and saute for 5 mins till it slightly turns golden.
▢
Add in a spice powder,salt and mix well. Add tamarind juice and mix well.
▢
Add jaggery and mix well.
▢
Bring it to a boil, simmer for 10 to 15 mins till done.
▢
Serve with rice.
