Ingredients
  

  • Oil - 4 to 5 tblspn
  • Mustard Seeds / Kaduku - 1 tsp
  • Urad dal / Ulundu Paruppu - 1 tsp
  • Fenugreek Seeds / Vendayam / Methi - ¼ tsp
  • Curry leaves a small handful
  • Shallots / Sambar Onion - 10 peeled
  • Tomato - 1 large chopped
  • Brinjal - 2 chopped
  • Salt to taste
  • Turmeric Powder - 1 tsp
  • Chilli Powder - 1 tblspn
  • Coriander Powder - 2.5 tblspn
  • Jaggery or Sugar - 2 tsp
  • Tamarind - 1 lemon size
  • Water as needed

Instructions
 

  • Soak tamarind in water for 10 mins. Squeeze and extract the pulp.
  • Heat oil in a pan, add mustard, urad dal, fenugreek and curry leaves.
  • Add in shallots, brinjal and tomatoes and saute for 5 mins till it slightly turns golden.
  • Add in a spice powder,salt and mix well. Add tamarind juice and mix well.
  • Add jaggery and mix well.
  • Bring it to a boil, simmer for 10 to 15 mins till done.
  • Serve with rice.
