Chicken kebab also known as chicken kabab, chicken skewers is a popular dish in India, Middle Eastern and Asian cuisine. It is called as chicken on a stick, which has marinate of lemon, garlic, chillies and spices which is grilled on a grill pan or in oven. 2medium Boneless Skinless Chicken Breast cut into cubes (around 500 grams)
For Marination
¼cupLemon Juice
3tbspOlive Oil
6clovesGarlicminced
4tbspCoriander leavesfinely chopped
2tspSugar
1tbspRed Chilli Flakes
1tspSalt to taste
Instructions
Take chicken in a bowl, add all the marination ingredients and mix well. Leave it to marinate for 1 to 2 hours.
Now skewers this in a bamboo skewer and place it on a preheated grill pan. Cook for 3 to 4 mins on one side and flip over and cook for another 3 mins on other side. Serve hot.
Notes
You can use chicken thigh instead of chicken breast. Thigh stays juicy than chicken breast.
You can adjust the spice level according to your taste.
Chicken breast tends to over cook faster, so always keep an eye when cooking chicken breast.
The meat can be left to marinate for 30 minutes, 2 hours to overnight in fridge.

Chicken Kebab in oven
Once marination is done. Skewer the chicken. Place it in a cast iron pan, drizzle with some olive oil. Place the cast iron pan straight into the 250 degree C preheated oven and bake for 10 to 12 minutes on the top rack. Flip the chicken in between for even baking.
Chicken Kebab on Grill
You can barbeque chicken kebab in open grill. Just place it in a greased barbeque and cook for couple of minutes on each side. Make sure you cook it on medium heat. Make sure you base the chicken with butter and extra lemon juice.
