Ingredients

  • For Dough:
  • All Purpose Flour / Maida - 1 cup
  • Oil or Ghee - 3 tblspn
  • Salt - ½ tsp
  • Water as needed
  • Oil for deep frying
  • For Filling:
  • Gram Flour / Kadalai Mavu / Besan - 1 cup
  • Sooji / Rava - 1 tblspn
  • Chilli Powder - 1 tsp
  • Salt to taste
  • Ajwain / Omam / Carom Seeds - ¼ tsp
  • Oil - 2 tblspn
  • Asafoetida / Hing / Kaya podi a pinch
  • Water as needed

Instructions

  • Take all purpose flour, salt, oil or ghee in a bowl and rub well so it is well mixed in. Add water slowly and make a stiff dough.
  • Now take all filling ingredients in a bowl and mix well. Add water slowly and make a dough.
  • Now divide each dough into equal size small balls.
  • Take maida ball and flatten it, place filling ball in and cover from all sides. Now flatten it and roll it thin. Use a fork to prick it all over it.
  • Heat oil for deep frying, drop mathri in and fry till golden brown.
  • Drain and cool it down.
  • Serve.
