Ingredients

  • 2 Tortillas sliced into thin strips
  • 4 Eggs
  • 1 Onion chopped
  • 1 Tomato chopped
  • ½ Capsicum chopped
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Oil

Instructions

  • Beat egg with some salt and pepper and set aside.
  • In a frying pan add oil and fry the thinly sliced tortilla pieces till crispy.Remove it and set aside.
  • Now heat oil again in that pan and fry onion, capsicum, tomatoes for 1 min.
  • Add in the eggs and scramble slightly. Add in the fried tortilla pieces when it is still gooey and runny. Mix well.
  • Tip this in to a plate and enjoy..
