Carrot-2 large chopped
Coconut-3 tblspn grated
Peanuts-3 tblspn roughly crushed
Mustard seeds / Kaduku-1 tsp
Cumin seeds / Jeerakam-1 tsp
Urad dal / Ulundu parupu-1 tsp
Channa dal / Kadala parupu-1 tsp
Asafoetida / Hing / Kaya podi- ¼ tsp
Curry leaves-1 spring
Salt to taste
Microwave chopped carrot and beans by adding some water and salt for 5 mins.
Heat oil in a kadai, add in mustard seeds, channa dal, urad dal, cumin seeds, peanuts, hing, curry leaves and mix well.
Now add in coconut and mix for 1 min.
Now add in cooked veggies and mix well. Add a splash of water and mix well.
Cover and cook for 10 mins on a very slow flame.By which time the veggies must have absorbed all flavours and cooked completely.
Serve this with rice and dal..
