Ingredients

  • Carrot-2 large chopped
  • Beans-20 chopped
  • Coconut-3 tblspn grated
  • Peanuts-3 tblspn roughly crushed
  • Mustard seeds / Kaduku-1 tsp
  • Cumin seeds / Jeerakam-1 tsp
  • Urad dal / Ulundu parupu-1 tsp
  • Channa dal / Kadala parupu-1 tsp
  • Asafoetida / Hing / Kaya podi- ¼ tsp
  • Oil-1 tblspn
  • Curry leaves-1 spring
  • Salt to taste

Instructions

  • Microwave chopped carrot and beans by adding some water and salt for 5 mins.
  • Heat oil in a kadai, add in mustard seeds, channa dal, urad dal, cumin seeds, peanuts, hing, curry leaves and mix well.
  • Now add in coconut and mix for 1 min.
  • Now add in cooked veggies and mix well. Add a splash of water and mix well.
  • Cover and cook for 10 mins on a very slow flame.By which time the veggies must have absorbed all flavours and cooked completely.
  • Serve this with rice and dal..
