Ingredients

  • Wheat Flour / Atta - ¾ cup / 90 grams
  • Oats - ½ cup / 45 grams
  • Baking Soda / Cooking Soda - ½ tsp
  • Baking Powder - 1 tsp
  • Oil - ¼ cup / 60 ml
  • Jaggery / Sugar - ½ cup / 90 grams
  • Vanilla Essence - 1 tsp
  • Flax Seed Powder - 1 tblspn
  • Warm Water - 3 tblspn
  • Carrot - 1 cup grated
  • Milk - ¼ cup / 60 ml add more if the batter is too thick

Instructions

  • Preheat Oven to 180 Degree C.
  • I used a silicone mini bundt pans for making this, you can use cupcake pan or a loaf pan. Since i used silicone i oiled it lightly. If you are using other pans, oil and flour it well.
  • Take flax seed powder in a bowl, add in warm water and mix well. Set this aside for 5 mins.
  • Take wheat flour, oats, baking soda and baking powder in a bowl and mix well.
  • Take oil, jaggery, vanilla in a bowl and mix really well.
  • Add in the flax seed mix and mix well.
  • Now add in the flour mix and fold gently.
  • Add in milk and mix well.
  • Now add in grated carrots and fold.
  • Spoon into the pan and bake for 15 to 20 mins.
  • Remove it and let it cool for 5 mins.
  • Now invert it and serve warm with tea.
