Shahi Pulav ( Pulao ) / Shahi Pilaf / Shahi Biryani

Ingredients

  • 1 cup Basmati Rice
  • 1 large sliced thinly Onions
  • 3 large slit Green Chilli
  • 2 tblspn Ginger Garlic Paste
  • Salt to taste
  • Sugar
  • a handful Coriander Leaves
  • a handful Mint Leaves
  • 1 tblspn Water
  • For Seasoning:
  • 2 tblspn Ghee
  • 1 tblspn Cumin Seeds / Jeerakam
  • -1 Bay Leaf
  • 1 inch piece Cinnamon Stick -
  • 4 crushed Cardamom / Yelakai
  • 4 Cloves / Krambu

Instructions

  • Wash and soak the rice for 30 mins.
  • Heat ghee in a pressure cooker. Add in all the seasoning ingredients and saute for a while.
  • Now add in salt and sugar and mix well. Let them cook for a while.
  • Add in onions, green chilli and saute till they turn golden.
  • Now add in ginger garlic paste and saute them for a min.
  • Now add in the soaked drained rice and mix them well.
  • Add in a good amount of coriander and mint leaves.
  • Pour in 1.5 cups of water and bring it to a boil. Simmer the flame and pressure cook for 1 whistle. Let it simmer for 5 mins. Switch off the flame and let the steam go all by itself. Fluff the rice with a fork.
  • Serve with any curry.
