Ingredients

  • 1 large Eggplant / Brinjal
  • Oil as needed for shallow frying
  • For Batter :
  • 1 cup Gram Flour / Besan / Kadalai Mavu
  • ½ cup Rice Flour / Arisi Mavu
  • 2 tsp Chilli Powder
  • 2 tsp Coriander Powder / Malli Podi
  • ½ tsp Turmeric Powder / Manjal Podi
  • 1 tsp Cumin Powder / Jeera Podi
  • 1 tsp Amchoor Powder / Dry Mango Powder
  • Salt to taste
  • Water as needed

Instructions

  • Slice eggplant into thin slices.
  • Mix the batter ingredients to a smooth batter. the batter should be little thin, but not too thin.
  • Heat oil for shallow frying, dip the eggplant slices in the batter and fry till golden on both sides.
  • Drain on to some paper towel.
  • Serve.
