large Eggplant / Brinjal

Oil as needed for shallow frying

For Batter :

Gram Flour / Besan / Kadalai Mavu

Rice Flour / Arisi Mavu

Chilli Powder

Coriander Powder / Malli Podi

Instructions
▢
Slice eggplant into thin slices.
▢
Mix the batter ingredients to a smooth batter. the batter should be little thin, but not too thin.
▢
Heat oil for shallow frying, dip the eggplant slices in the batter and fry till golden on both sides.
▢
Drain on to some paper towel.
▢
Serve.
