Ingredients

  • 1 Brinjal / EggPlant sliced into rounds
  • 2 tsp Red chilli powder
  • 1 tsp Turmeric powder / Manjal podi
  • 1 Onion sliced
  • 1 sprig Curry leaves
  • Oil for shallow frying
  • Salt to taste

Instructions

  • In a mixing bowl add chilli powder, turmeric powder, salt.
  • Add water and make into a smooth paste..
  • Now add the sliced brinjal in this and toss well.
  • Heat oil in a frying pan and add in the brinjals..
  • Fry this till golden and crisp on both sides..
  • Remove it on a plate..
  • Now in the balance of the oil add in the onions and curry leaves..
  • Fry this for 2 mins..Put this onion over the brinjal..
  • Serve with rice and dal..
