Creamy Pasta, Everyone needs a delicious recipe for creamy pasta on their repertoire. Not everyone is a fan of tomato pasta or white sauce pasta. This is a mild, not so heavy creamy pasta made with chicken, mushrooms. This creamy pasta is my go-to recipe for busy weeknight dinner because it uses ingredients that I already have on hand and it is healthy because it is made with milk and not cream like my alfredo pasta. Cook pasta in boiling salted water. Cook pasta 2 mins less than the timing mentioned in the package. Drain and set aside.
Heat 1 tbsp olive oil in a pan. Add in chicken, season with salt and pepper. Cook on high heat for 2 mins. Remove to a bowl and set aside.
Heat butter in the same pan. Add 1 tbsp olive oil. Add in onions and saute for 2 mins. In goes garlic and saute for 30 more seconds. Now add in capsicum, mushrooms along with salt, pepper and red chilli flakes. Now saute this for 2 mins. Pour in milk and the cooked chicken in and bring it to a boil.
Add in cooked pasta along with parmesan cheese and parsley. Mix everything well and lower the flame. Cover with lid and cook on low heat for 3 mins.
Remove the lid and mix everything well. The pasta would have absorbed all the milk and become really creamy. Finish with parmesan cheese and mix well.
Serve hot.

Notes
I used whole milk. You can add a splash of cream along with milk for more thickness.
The starch in the pasta will emulsify with the parmesan cheese and milk to create the creamy texture, so allowing it to rest covered is essential.
Serve this pasta dish immediately, else it may thicken more.
You can add any vegetables of your choice like broccoli, corn, carrot, peas.
You can skip chicken if you want to keep it vegetarian.
For Vegan Creamy Pasta
For vegan option, use olive oil instead of butter. You can use vegan butter as well.
