Ingredients
  

  • Rice – 3 cups cooked
  • Coconut -1 cup Freshly Grated
  • Coconut Oil – 2 tblspn
  • Curry leaves – 2 springs
  • Cashews – 10
  • Channa Dal / Kadala Paruppu – 1 tsp
  • Whole Pepper -1 tsp
  • Urad Dal / Ulundu – 1tsp
  • Mustard Seeds / Kaduku -1 tsp
  • Cardamom – 5
  • Dry Red Chilli – 3
  • Salt to taste

Instructions
 

  • Heat Coconut oil in a kadai. Add Mustard Seeds, Urad dal and Saute for a min.
  • Add Channa Dal, Pepper, Cashews, Cardamom, Dry Red Chilli and Curry leaves. Saute this for 30 sec.
  • Add in Coconut and mix well. Add some salt and sauté till it gets light golden.
  • Now add in rice and mix well..Fry this for 3 mins untill the rice is heated through.
  • Serve hot or put in lunch box.
