Ingredients
▢
Rice – 3 cups cooked
▢
Coconut -1 cup Freshly Grated
▢
Coconut Oil – 2 tblspn
▢
Curry leaves – 2 springs
▢
Cashews – 10
▢
Channa Dal / Kadala Paruppu – 1 tsp
▢
Whole Pepper -1 tsp
▢
Urad Dal / Ulundu – 1tsp
▢
Mustard Seeds / Kaduku -1 tsp
▢
Cardamom – 5
▢
Dry Red Chilli – 3
▢
Salt to taste
Instructions
▢
Heat Coconut oil in a kadai. Add Mustard Seeds, Urad dal and Saute for a min.
▢
Add Channa Dal, Pepper, Cashews, Cardamom, Dry Red Chilli and Curry leaves. Saute this for 30 sec.
▢
Add in Coconut and mix well. Add some salt and sauté till it gets light golden.
▢
Now add in rice and mix well..Fry this for 3 mins untill the rice is heated through.
▢
Serve hot or put in lunch box.
