Ingredients

  • Whole Wheat Focaccia Bread as needed check this link
  • 1 tbsp Olive Oil
  • 1 large Onion sliced thinly
  • 3 cloves Garlic chopped finely
  • 1 Bell Pepper sliced thinly
  • ½ Zuchinni sliced into thin slices
  • Lettuce as needed
  • 1 tsp Oregano
  • 1 Green Chilli Pepper chopped finely
  • Salt to taste
  • 1 tsp or to taste Lemon Juice
  • For Garlic Mayo Spread:
  • ¼ cup Mayonnaise
  • 1 cloves Garlic chopped finely

Instructions

  • Heat oil in a pan, add in onions and saute till it is lightly wilted.
  • Now add in peppers and veggies and toss well.Cook till it is well caramelized.
  • Now add in garlic, oregano and salt and mix well. Add in lemon juice and mix well.
  • Mix mayo and garlic for the sauce. Set aside.
  • Take your focaccia, and slit them in middle. You can toast them if you want too.
  • Now spread the mayo on both sides and top with the veggies. PLace the other half on top and press down.
  • Now you can enjoy it immediately or wrap it in plastic wrap or foil for putting in lunch box.
