Eggless Coconut Basbousa Recipe with step by step pictures. The main ingredient of this cake is semolina and coconut. It is mildly sweet and after baking it is soaked in sugar syrup which is flavored with rose syrup.

Ingredients

  • Dry Ingredients:
  • 1 cup Fine Semolina | Sooji
  • 1 cup Coconut
  • ½ cup All Purpose Flour
  • ¾ cup Sugar
  • 1 tsp Baking powder
  • Saffron - a pinch
  • 1 tsp Cardamom powder
  • ½ tsp Salt
  • Wet Ingredients:
  • 1 ½ cup Yogurt
  • ½ cup melted Butter
  • For Syrup:
  • ½ cup Sugar
  • ½ cup Water
  • 1 tsp Rose Water

Instructions

  • Grease a 20 x 20 cm pan with butter and set aside. Preheat the oven to 170 Degree C / 350 Degree F.
  • Take all the dry ingredients in a bowl. Mix well.
  • Now add in yogurt and butter in it and mix well.
  • Pour this in a greased pan and bake it for 45 to 50 mins.
  • Remove it from oven and cool it down. Cut this into slices.
  • Now make syrup. Take sugar and water in a sauce pan and heat it till it is melted. Simmer for 5 mins.
  • Remove this to a bowl. Add in rose water and mix well.
  • Pour this over the cake and let it soak, allow it to cool down.
  • Serve.
