Ingredients

  • 3 cups + more for kneading Whole Wheat Flour / Atta
  • ½ cup Curd / Yogurt
  • ½ cup Warm Milk
  • ½ cup or more Water
  • 1 tbsp Sugar
  • Salt to taste
  • 1 tbsp Dried Yeast
  • 3 tbsp Olive Oil

Instructions

  • Take warm milk in a bowl, sprinkle sugar and yeast and let it sit for 5 mins till the yeast is bubbly and activated.
  • Take wheat flour, curd, salt, oil in a bowl and mix well. Add in yeast milk and knead well. Add in water and mix well. The dough will be very sticky.
  • Now dust work surface with some flour and tip the dough into the work surface and keep kneading for a good 6 to 8 mins. Now the dough will start to come together.
  • Put that in a bowl and cover with plastic wrap and it it rise for 1 hour to 1.30 hour.
  • Once it is doubled in size, punch down the air and roll it into a log. Cut into equal portions.
  • Take a portion and flatten it into a rectangle. Roll it from a side and pinch the ends together. Place the seamed side down in a oiled baking tray. Repeat like this for the whole dough. Leave space between each roll.
  • Now cover it with plastic wrap and let it rise for 1 hour in a warm place.
  • In the last 10 mins of rising, preheat the oven to 200 Degree C.
  • Now brush the top with some milk and sprinkle sesame seed over it.
  • Bake it for 25 mins untill the top is golden.
  • Remove it and let it cool completely.
  • Now slice and serve.

Notes

1) This rolls are made with 100% whole wheat flour, it will be little dense. If you want a little lighter rolls, add ½ cup plain all purpose flour instead of  ½ cup of wheat flour. 
2)This is best had on the same day.
3)The dough which you make will be very sticky, this will result in lighter soft buns.
4)You can make normal buns out of it too.
