Ingredients

  • Brinjals – ½ kg cut into rounds
  • Onion- 1 large sliced
  • Tomato- 2 large chopped finely
  • Green Chilli – 1
  • Chilli Powder – 1tsp
  • Coriander Powder / Malli Podi -1 tblspn
  • Amchoor Powder / Dry Mango Powder -1 tsp
  • Turmeric Powder / Manjal Podi – ½ tsp
  • Cumin Seeds / Jeerakam -1 tsp
  • Kasuri Methi Leaves / Dried Fenugreek leaves – 1 tblspn
  • Curry leaves – 1 spring
  • Coriander Leaves / Cilantro – for garnishing
  • Sal to taste
  • Oil- 5 tblspn

For Batter:

  • Gram Flour / Kadalai Mavu / Besan – ½ cup
  • Chilli Powder – 1 tsp
  • Coriander Powder / Malli Podi -1 tsp
  • Amchoor Powder / Dry Mango Powder -1 tsp
  • Turmeric Powder / Manjal Podi – ½ tsp
  • Kasuri Methi Leaves / Dried Fenugreek leaves – 1 tblspn
  • Salt to taste

Instructions

  • In a mixing bowl take gram flour and all the ingredients given for batter except oil. Add water and make into a batter, it should be like dosa batter consistency.
  • Heat 1 tblspn of oil for one batch of frying brinjals in a tawa..Dip the Brinjals in this batter and fry it for 3 mins on each sides on a medium heat till cooked. Finish the entire batch like this. Remove them on to a plate and set them aside.
  • Heat 2 tblspn oil in a kadai. Add cumin seeds and let them crackle.
  • Now add onions and green chillies and mix well.
  • Add salt, chilli powder, coriander powder, turmeric powder, amchoor powder, kasuri methi leaves and mix well.
  • Throw in tomatoes and cook for 3-4 mins until the tomatoes turn mushy. Add in curry leaves and toss well.
  • Throw in the cooked brinjal pieces and mix well in the masala.
  • Garnish with cilantro and serve hot with rice..
