Pudina Rice Recipe with step by step pictures. Mint rice or pudina rice is made with mint leaves and spices which are made into a chutney and then tossed with rice.

Ingredients

  • Rice – 3 cups Cooked and Cooled
  • For Grinding:
  • Mint Leaves / Pudhina – 2 cup tightly packed
  • Coconut – ½ cup
  • Garlic – 5 cloves
  • Green Chilli – 3
  • Salt to taste
  • Sugar – 1 tsp
  • For Tempering:
  • Ghee – 3 tblspn
  • Mustard Seeds / Kaduku – 1 tsp
  • Channa Dal / Kadala Paruppu – 1 tblspn
  • Urad dal / Ulundu Paruppu – 1 tblspn
  • Cashew – 10 piece
  • Cinnamon / Pattai – 1 small stick
  • Cardamom / Yelakai – 4
  • Bay Leaf / Brinji ilai – 1

Instructions

  • Grind all the ingredients given in the list to a fine paste. Set this aside.
  • Heat ghee in a pan. Add all the ingredients given in the list in the given order and sauté for a min till they turn golden.
  • Add the ground masala and mix well. Cook till oil separates. It will take around 10 mins. Add sugar and mix well. Mint Rice Paste is done.
  • Add in cooked rice and mix well. Saute for 2 mins.
  • Serve immediately.
