Ingredients

  • 1 large Broccoli cut into florets
  • Salt
  • Boiling water

For Cheese Sauce

  • 2 tbsp Butter
  • 1 tbsp Garlic chopped finely
  • 2 tbsp All Purpose Flour
  • 2 cups Milk
  • Salt to taste
  • ½ tsp Black pepper powder
  • tsp Ground nutmeg
  • ½ cup mozzarella cheese grated
  • ¼ cup mozzarella cheese grated

Instructions

  • Bring water to a boil. Add salt to it. Add in broccoli stems and florets. Cook for 1 min till it gets bright green in colour. Drain them and set aside.
  • Heat butter in a sauce pan. Add in garlic and saute for 10 seconds till fragrant.
  • Add in flour and stir fry for a min. Add in milk and mix well. Stir till it thickens. 
Finally add in salt, pepper and nutmeg. Mix well. Stir in ½ cup of cheese and mix till cheese is melted.
  • Take a baking dish. Add cooked broccoli into the dish. Pour cheese sauce over it and top with remaining cheese.
  • Broil this on high till bubbly and golden brown in a 220 degree C preheated oven for 10 to 15 mins.
  • Remove and serve.

Notes

Variations

  1. You can use cauliflower instead of broccoli. Carrots, mushrooms, potatoes, baby corn, mixed vegetables can be used.
  2. Sprinkling of parmesan cheese gives a good taste.
  3. Topping broccoli and cheese with breadcrumbs gives crunchy taste.

Tips

  1. Never discard broccoli stems. Use a knife to remove the outer skin of the stem and cut it into bite size pieces and use.
  2. Once butter and flour is combined, pour in cold milk instead of hot milk to avoid lumps.
  3. Always cook the cheese sauce on low heat.
  4. Parmesan cheese, cheddar cheese can be added.
  5. Any spices that you prefer can be used.
  6. Topping broccoli and cheese with breadcrumbs gives crunchy taste.
