    Broccoli and cheese recipe with step by step pictures. Popular baked broccoli cheese recipe made with white sauce, cheese and baked till bubbly and golden.

    One of my favourite dish to make is cauliflower and cheese. I made this recipe using broccoli and it turned out perfect. Loved it with slices of toasted bread.

    About Broccoli and Cheese

    Baked broccoli cheese is made by blanching broccoli in salted boiling water and tossing it with white sauce and cheese. This whole dish is baked till cheesy and bubbly. The combination of broccoli with cheese takes it to the next level. 

    I have a certain way to make broccoli and cheese. I don't like to over cook my broccoli. You have to cook till they have a bit of bite to it. Check my written recipe card to see how I do it. The sauce made is quick, easy and homemade.

    This side dish can be served with toasted bread, steamed rice or any roti. It will be a favorite with your kids.

    Variations

    • You can use cauliflower instead of broccoli. Carrots, mushrooms, potatoes, baby corn, mixed vegetables can be used.
    • Sprinkling of parmesan cheese gives a good taste.
    • Topping broccoli and cheese with breadcrumbs gives crunchy taste.

    Step by Step pictures

    1)Bring water to a boil. Add salt to it. Add in broccoli stems and florets. Cook for 1 min till it gets bright green in colour.

    2)Strain them through a sieve and set aside.

    3)Now lets make the sauce. Heat butter in a sauce pan. Add in garlic and saute for 10 seconds till fragrant.

    4)Add in plain flour into the butter and stir fry for a min.

    5)Mix and cook until the flour toasts lightly and smells good.

    6)Now pour in cold milk and mix well using a whisk so there is no lumps formed. Cold milk prevents lumps formation in white sauce.

    7)Cook until the sauce coats the back of the spoon.

    8)Now add in grated cheese. You can use cheddar cheese or mozzarella cheese.

    9)Season the sauce with salt, black pepper and ground nutmeg.

    10)Mix and cook on low until the cheese melts. White cheese sauce is ready.

    11)Take a baking dish. Add cooked broccoli into the dish. Pour cheese sauce over it.

    12)Now sprinkle the top with remaining cheese. Pop it into the oven on broil mode.

    13)Broil this on high till bubbly and golden brown in a 220 degree C preheated oven for 10 to 15 mins. Remove from oven, allow to cool a bit. Serve.


    Expert Tips

    • Never discard broccoli stems. Use a knife to remove the outer skin of the stem and cut it into bite size pieces and use.
    • Once butter and flour is combined, pour in cold milk instead of hot milk to avoid lumps. 
    • Always cook the cheese sauce on low heat.
    • Parmesan cheese, cheddar cheese can be added. 
    • Any spices that you prefer can be used. 
    • Topping broccoli and cheese with breadcrumbs gives crunchy taste.

    Ingredients
      

    • 1 large Broccoli cut into florets
    • 1 teaspoon Salt
    • 5 cups Boiling water

    For Cheese Sauce

    • 2 tablespoon Butter
    • 1 tablespoon Garlic peeled & chopped finely
    • 2 tablespoon All Purpose Flour
    • 2 cups Cold Milk
    • 1 teaspoon Salt to taste
    • ½ teaspoon Black pepper powder
    • ⅛ teaspoon Ground nutmeg
    • ½ cup mozzarella cheese grated

    For Topping

    • ¼ cup mozzarella cheese grated

    Instructions
     

    • Bring water to a boil. Add salt to it. Add in broccoli stems and florets. Cook for 1 min till it gets bright green in colour. Drain them and set aside.
    • Heat butter in a sauce pan. Add in garlic and saute for 10 seconds till fragrant.
    • Add in flour and stir fry for a min. Add in milk and mix well. Stir till it thickens. 
Finally add in salt, pepper and nutmeg. Mix well. Stir in ½ cup of cheese and mix till cheese is melted.
    • Take a baking dish. Add cooked broccoli into the dish. Pour cheese sauce over it and top with remaining cheese.
    • Broil this on high till bubbly and golden brown in a 220 degree C preheated oven for 10 to 15 mins.
    • Remove and serve.
