Brinjal Bell Pepper Masala Recipe
Easy and quick side dish for rice is this brinjal bell pepper masala. This taste amazing with roti, rice or any main dish.

- Oil - 3 tblspn
- Fennel Seeds / Sombu / Saunf - 1 tsp
- Onion - 1 large sliced thinly
- Bell Pepper - ½ sliced thinly
- Tomatoes - 2 large chopped finely
- Brinjal - 1 large sliced thinly
- Salt to taste
- Turmeric Powder - 1 tsp
- Chilli Powder - 1 tsp
- Coriander Powder - 1 tblspn
- Cumin Powder - 1 tsp
- Garam Masala Powder - 1 tsp
Heat oil in a kadai. Add fennel and let them sizzle.
Add onions and peppers along with salt and turmeric and mix well. Cook till onions soften.
Add in tomatoes and cook that down till mushy.
Add in spice powders and mix well.
Now add in brinjal and toss well in the masala.
Cover and cook for 10 to 15 mins.
Now it is done.
Serve over rice.
