Chicken, Rice & Lime Soup Recipe
Chicken, Rice & Lime Soup recipe with step by step pictures. This recipe is filled with spices, chicken breast and even a tang from fresh lime juice.
Ingredients
- Olive Oil - 2 tsp
- Garlic - 5 cloves chopped finely
- Onion - 1 medium size chopped finely
- Tomato Puree - 1 cup
- Vegetable Stock or Chicken Stock - 2 cups
- Chicken Breast - 1 large chopped finely
- Chilli Powder - 1 tsp
- Cumin Powder - 1 tsp
- Pepper Powder - 1 tsp
- Salt to taste
- Sugar - ½ tsp
- Oregano - 1.5 tsp
- Cooked Rice - 1.5 cup
- Coriander leaves a handful finely chopped
- Lime Juice - 2 teaspoon or to taste
Instructions
- Heat oil in a pan, add in garlic and onion and saute for couple of mins.
- Now add in tomato puree, stock, chilli powder, cumin powder, pepper powder, salt and sugar.
- Add in oregano as well. Bring it to a boil.
- Add in chicken and simmer for few mins till chicken is cooked.
- Now add in rice and simmer for few mins.
- Now add in coriander leaves and lime juice and mix well.
- Serve.
