Crème de Marrons Recipe (Sweet Chestnut Spread Recipe)

Crème de Marrons is a French sweetened chestnut spread that tastes almost like a toffee. It is an absolute staple in French households. Marrons in French means chestnuts. It is made by blending cooked chestnuts with sugar, vanilla and salt till smooth and paste like. You can use them as spread for toast, crepes, or in deserts like Mont Blanc.

Ingredients

  • 300 grams Cooked Chestnuts or vacuum-packed chestnuts
  • 150 grams Brown Sugar
  • cup Water
  • 2 teaspoon Vanilla Extract
  • ½ teaspoon Fleur de Sel (Salt)

Instructions
 

  • If you have pre cooked vacuum sealed chestnuts, you can straight away use it in the recipe without cooking it. If you have raw chestnuts, score the chestnuts and add them to a pot. Cover with water and cook covered for 30 to 40 minutes. Now strain the water and allow them to cool for a while. Now peel off the skin and use the cooked chestnuts in the recipe.
  • Take brown sugar and water in a pot. Bring it to a full boil. Add in the cooked chestnuts into the sugar syrup and cook for 5 to 7 minutes. Now turn off the heat and allow them to cool down.
  • Now take all the syrup and the cooked chestnuts in a blender jar. Add in vanilla extract and fleur de sel. Blend this till it forms into a smooth paste. You may need to scrape the blender few times for uniform blending.
  • Once the chestnuts blended till smooth, transfer this to an air tight container and store in fridge.
