Atakilt wat is a comforting and aromatic Ethiopian vegetable stew that is both simple and incredibly flavourful. It is prepared by slow cooking the vegetables like cabbage, potato, carrots and mixing them with the spicy berbere mix. It tastes very mild and has a subtle spice. Heat oil in a pan, add in cardamom and let them sizzle. Now add in onions and saute for a minute. Add in ginger garlic paste and cook for few seconds. Sprinkle in turmeric and cook for few seconds.
Now add in carrots, cabbage and potatoes. Season with salt and cook for couple of minutes. Add water and cover the pot with lid. Cook on medium heat until vegetables is tender and cooked. Add in Berbere spice mix, cumin powder and Mix well.
Cook this on high heat for couple of minutes. Serve with injera.
