Ingredients
  

  • 1 medium size chopped Onion
  • 6 cloves Garlic
  • 1 cubed Brinjal
  • 10 pieces Maa Vatral / Maa Vathal
  • 1 tablespoon Chilli Powder
  • 1 teaspoon Turmeric Powder / Manjal Podi
  • Salt to taste
  • 1 teaspoon Sugar
  • 1 tablespoon Rice Flour / Arisi Mavu
  • 3 cup Water
  • For Tempering:
  • 3 tablespoon Gingelly Oil / Nala Ennai
  • 1 teaspoon Mustard Seeds / Kaduku
  • 1 teaspoon Urad dal / Ulundu paruppu
  • 2 Dry Red Chilli
  • ¼ teaspoon Asafoetida / Hing / Kaya Podi
  • ½ teaspoon Fenugreek Seeds / Vendayam / Methi Seeds
  • 1 teaspoon Cumin Seeds / Jeerakam

Instructions
 

  • Heat oil in a sauce pan. Add in all the tempering stuffs and saute for a min.
  • Now add in onions, garlic and saute for a couple of mins.
  • Add in brinjal and maa vatral and saute for 5 mins.
  • Now add in spice powders and salt, mix well. Let it cook for a min.
  • Add in water and bring it to boil, add in sugar and mix well. Cover and simmer for 15 to 20 mins till everything is cooked.
  • Now mix rice flour with some water and make a slurry. Pour this into the curry and mix well. Simmer it for 5 mins.
  • Serve this with rice.
