They look just like the traditional gulab jamuns and turn out soft, juicy and delicious. Follow the step-by-step recipe and tips below to make soft and delicious potato gulab jamuns at home.

Ingredients

  • 1 cup Potatoes boiled, peeled and grated
  • 4 tablespoon All Purpose Flour (Maida)
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • Oil or Ghee for Deep frying

For Sugar Syrup

  • 2 cups Sugar
  • 2 cups Water
  • ¼ teaspoon Rose Water optional
  • ¼ teaspoon Saffron optional

Instructions
 

  • Start by making sugar syrup. Take sugar and water in a sauce pan, heat and bring it to a boil, boil it for 5 mins, it will get to sticky consistency.
  • Add in rose water and saffron and mix well. Now pour this into a large bowl and Keep the syrup warm.
  • Now make the jamun mixture. Take boiled cooled potatoes, peel off the skin and grate them through a grater.
  • Now measure 1 cup of mashed potatoes in a bowl. Add in flour, salt and baking soda.. Knead to a soft smooth dough. Don't over knead the dough. Just mix enough.
  • Now take small portion of the dough, roll it into a smooth ball. Roll all the mixture into smooth ball. Set this aside for a minute.
  • Now heat oil for deep frying, drop jamuns in hot oil and fry on a medium heat till golden. Keep mixing this for even colouring.
  • Now strain them through a slotted spoon and add the hot jamuns to the warm syrup immediately. Let them soak for 30 minutes to 1 hour.
  • Remove the jamuns carefully into a bowl and chill in fridge. Serve cold.

Notes

  • Mashing the potatoes is the main step, make sure it is lump free.
  • Don't add too much maida, if your mix is sticky, then add another tablespoon of maida. If you add too much maida then the jamuns will get hard.
  • Fry the jamuns in low to medium heat. Here is a trick, once you add jamuns to oil, don't stir immediately, leave them for a min them stir so you don't break the balls.
  • These jamuns will absorb the syrup faster, so if you leave the jamuns in the syrup for long time, then they will break up.
