Raw mango sambar is a simple and comforting South Indian recipe made with raw mango, cooked toor dal and basic spices. It has a perfect balance of spicy and sour flavours which goes very well with everyday meals like rice, idli or dosa.

Equipment

Ingredients
  

  • 1 medium Onion peeled and chopped
  • 1 large Raw Mango chopped with skin on
  • ½ teaspoon Turmeric Powder
  • 2 tablespoon Homemade Sambar powder
  • 2 teaspoon Salt to taste
  • 1 tablespoon Jaggery
  • 1 cup Water as needed

For Cooking Dal

  • ½ cup Toor Dal
  • ½ teaspoon Turmeric Powder
  • cup Water

For Tempering

  • 1 tablespoon Coconut Oil or Ghee
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Split Urad Dal
  • ½ teaspoon Asafoetida (Hing)
  • 2 sprig Curry leaves

For Garnishing

  • ½ cup Coriander Leaves finely chopped

Instructions
 

  • Take dal, turmeric, salt in a pressure cooker. Cover with water and pressure cook for 3 whistle. Simmer the flame and cook for 5 mins. Turn off the heat and let the steam go all by itself. Open the cooker and mash it well and set aside.
  • Now in a pot, add in oil along with tempering spices. Saute for a min. Add in onions, raw mangoes and mix well. Sprinkle with salt and turmeric powder and mix well.
  • Then add in 1 cup of water and cook till mangoes are just tender. Add in cooked dal, sambar powder, jaggery and mix well. Simmer it for few mins.
  • Garnish with coriander leaves and mix well. Serve with rice.
