Ingredients

  • Butter - 1 tsp + 1 tsp
  • Spinach - 1 cup chopped finely
  • Eggs - 3
  • Salt to taste
  • Black Pepper to taste
  • Mozzarella Cheese - 1/4 cup shredded

Instructions

  • Heat butter in a pan, add in spinach and saute for 2 mins.
  • Whisk eggs, salt and pepper. Add in cooked sauted spinach and mix well.
  • Heat butter in a pan. Pour egg mix in and spread evenly.
  • Cover and cook for 2 mins,
  • Add in mozzarella cheese and cook for few more mins.
  • Fold over.
  • Serve immediately.

Notes

1)Instead of spinach you can use any vegetable of your choice.
2)You can reduce 3 eggs to 2 eggs if you want to.
3)You can increase the quantity of spinach
4)Use any cheese as you like
5)Instead of butter, use ghee, coconut oil or avocado oil
6)You can scramble the eggs into the spinach and make spinach scrambled eggs as well.
