Poha is called as flattened rice. Kesari made using poha instead of sooji is a different take on a traditional dessert.

Ingredients
▢
Aval / Poha - 1 cup
▢
Sugar - ½ cup
▢
Water - ½ cup +½ cup
▢
Cardamom Powder - 1 tsp
▢
Cashews - 2 tblspn finely chopped
▢
Ghee - 1 tblspn
Instructions
▢
Take poha in a mixer and powder them coarsely. Take them in a bowl, add in ½ cup of water and mix well.
▢
In a non stick pan, add in 1 tsp of ghee and fry the cashews. Remove them to a bowl.
▢
Add another 1 tsp of ghee and add the poha. Fry this for a min.
▢
Add in sugar and ½ cup of water. Mix well. the sugar will melt. keep stiring on high heat for 8 to 10 mins.
▢
The mix will thickens and the colour will darkens.
▢
Now add in cardamom powder, fried cashews and another tsp of ghee.
▢
Mix well. It will leave the sides of pan.
▢
Now remove them and serve.
