Aval Kesari Recipe / Poha Kesari Recipe

I have made and posted so many variations of kesari in this blog. So far i have made rava kesari, rava milk kesari, pineapple kesari and semiya kesari and i have a post for fruit kesari coming very soon. These shows my love for kesari. I love adding fruits in my kesari too..

But never thought of making a kesari with aval/poha. Krishna jayanthy is around the corner, so when i was looking for new recipes to post in this week. I came across this kesari. So i took the concept from that and made as per my taste and recipe.

The end result was fabulous and this took me very less time, say under 15 mins from start to finish and you dont need much ghee to make this.  It is really healthy one too.
So try this out and let me know how it turns out for you..In the mean time check out my other krishna jayanthy recipes as well.
Preparation Time : 1 mins
Cooking Time : 12 to 15 mins
Serves : 2 to 3

Ingredients:
Aval / Poha – 1 cup
Sugar – 1/2 cup
Water – 1/2 cup +1/2 cup
Cardamom Powder – 1 tsp
Cashews – 2 tblspn finely chopped
Ghee – 1 tblspn
Method:
Take poha in a mixer and powder them coarsely. Take them in a bowl, add in 1/2 cup of water and mix well.
In a non stick pan, add in 1 tsp of ghee and fry the cashews. Remove them to a bowl.
Add another 1 tsp of ghee and add the poha. Fry this for a min.
Add in sugar and 1/2 cup of water. Mix well. the sugar will melt. keep stiring on high heat for 8 to 10 mins.
The mix will thickens and the colour will darkens.
Now add in cardamom powder, fried cashews and another tsp of ghee.
Mix well. It will leave the sides of pan.
Now remove them and serve.

Pictorial:
Take all your ingredients

Take aval(poha) in a blender..I used red rice poha

Powder them little coarsely

Take them in a bowl

Add some water

Mix well so it is wet and softens

Heat 1 tsp of ghee in a pan

Add in finely chopped cashews and roast

Once they turn golden, remove them to a small bowl

Add another tsp of ghee

Add the soaked poha

fry for a min

Add in sugar

mix mix mix

add a splash of water

cook on medium heat till it gets thick

Now it is getting thick

keep stiring..

add in cardamom seeds

another tsp of ghee

fried cashews

mix well

now the kesari is done

serve
