Take bacon and chop them into small pieces. Pop them into frying pan, and cook them till golden and crispy. Drain them to some paper towel.
Now drain off excess fat, add in onions, bell peppers and saute till done.
Add in little salt, chilli flakes, oregano and mix well. Add bacon and toss well. Filling done.
Take breadcrumbs, chilli flakes, salt in a bowl and set aside. Beat a egg well and set aside.
Take chicken breast or thigh over a sheet of plastic wrap and cover with another sheet of plastic wrap.
Bash it well with a rolling pin to make it thin and even.
Place a cheese slice over each chicken, spoon the pepper bacon filling over it and roll it carefully.
You can wrap it with plastic wrap and chill it for 30 mins to make it firm.
Now coat the chicken in egg and roll it in breadcrumbs. Secure the chicken with toothpick.
You can freeze this for 15 mins if needed.
Preheat oven to 180 degree C.
Heat oil in a frying pan, place chicken over it and cook till golden on both sides.
Place this in a foil lined baking tray and pop it in oven for 15 mins.
Remove it from oven, remove the toothpick. Serve.
