Chicken Roulade Recipe – Chicken Bacon Roulade Recipe

Chicken roulade is a dish which i wanted to try it for quite a long time. This dish is a special one, because it has cheese, bacon, onions and peppers in it, which is rolled and coated in breadcrumbs and fried to perfection..Taste so juicy and yummy.

I used Wright Brand® Bacon for this roulade..It can be found in walmart at a great value…And it clearly took this dish to the next level..This clearly shows that bigger better bacon is not only meant for breakfast, it can jazz up your lunch or dinner to the perfect level. This roulade can be served as a main course for lunch or dinner along with a side salad and a drink.

Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serves : 2

Ingredients:

Chicken Breast or Thighs – 4 to 6
Bacon – 4 slices
Onion – 1 medium size sliced thinly
Bell Peppers / Capsicum – 1/2 sliced thinly
Salt to taste
Oregano – 1/2 tsp
Red Chilli Flakes – 1 tsp
Cheese Slice – 2
Oil – 3 to 5 tblspn

For Coating:
Egg – 1
Breadcrumbs – 1 cup
Chilli flakes – 1 tsp
Salt to taste


Method:

Take bacon and chop them into small pieces. Pop them into frying pan, and cook them till golden and crispy. Drain them to some paper towel.

Now drain off excess fat, add in onions, bell peppers and saute till done. Add in little salt, chilli flakes, oregano and mix well. Add bacon and toss well. Filling done.

Take breadcrumbs, chilli flakes, salt in a bowl and set aside. Beat a egg well and set aside.

Take chicken breast or thigh over a sheet of plastic wrap and cover with another sheet of plastic wrap. Bash it well with a rolling pin to make it thin and even.

Place a cheese slice over each chicken, spoon the pepper bacon filling over it and roll it carefully. You can wrap it with plastic wrap and chill it for 30 mins to make it firm.

Now coat the chicken in egg and roll it in breadcrumbs. Secure the chicken with toothpick. You can freeze this for 15 mins if needed.

Preheat oven to 180 degree C.

Heat oil in a frying pan, place chicken over it and cook till golden on both sides.

Place this in a foil lined baking tray and pop it in oven for 15 mins.

Remove it from oven, remove the toothpick. Serve.

Start by chopping bacon
take it in a pan
cook till it gets crispy
it will get golden
let it crisp up
drain it
pour off if there is too much fat, keep just a tblspn of fat
add in sliced onions and peppers
toss well
saute till it gets little golden
season with little salt, chilli flakes and oregano
add in the fried bacon
toss well
filling done
place couple of boneless chicken breast of thighs on a sheet of plastic wrap
cover it with another sheet of plastic wrap
use a rolling pin to bash it
now it has got thinner 
now time to stuff and roll this
Place a cheese slice over it
spoon the onion and pepper filling
start rolling
keep rolling
now it is all rolled nicely
i like to wrap it with the plastic wrap and chill it
 for 30 mins or so
now lets make the seasoned breadcrumbs..take
breadcrumbs, chilli flakes and salt in a plate
mix that around
Crack open a egg and beat it well
take the chicken
dip it in egg
coat it with breadcrumbs
you can pop this in freezer for 15 mins,so the breadcrumbs
 sets over the chicken
i secured a chicken with a little toothpick
now lets fry this in a pan with some oil
fry both sides till it gets golden brown
now place this in a foil lined tray and pop this in oven
this is how it looks once it come out of the oven
dont forget to remove the toothpick before serving
Serve over some lettuce
