Schezwan Roast Chicken Recipe (Baked Schezwan Chicken)

Schezwan baked Chicken recipe is a spicy and flavorful dish which is made with chicken drumsticks marinated in a Schezwan sauce. Int his recipe chicken is first soaked in a brine of salt and sugar to keep the chicken juicy and soft. Then it is coated with Schezwan sauce. Which gives a bold and rich taste.

Ingredients
  

For Brining Chicken

  • 8 no Chicken Drumstick
  • 3 tablespoon Salt
  • 3 tablespoon Sugar
  • Water

For Schezwan Baked Chicken

Instructions
 

  • Take chicken drumstick in a bowl, Make few slashes over the chicken. Now to brine the chicken, cover it completely with water, add salt and sugar to it. Mix well. Cover it tightly with some plastic wrap and chill this in fridge atleast for 4 hours or overnight. Next day remove it a hour before cooking from fridge and use.
  • Now to make schezwan baked chicken. Preheat oven to 220 degree C.
  • Drain chicken from their brine. Pat dry the chicken with paper towel to remove excess water.
  • Take chicken and arrange them in a foil lined baking tray. Brush it completely with schezwan sauce. Bake them for 15 mins. Now this seal the juices in the chicken.
  • Now reduce the oven temp to 180 degree C. Now take the chicken out, brush the chicken with more sauce. Bake for 15 more mins.
  • After 15 minutes. Remove tray from oven and brush the chicken with sauce. Bake for 15 more mins.
  • Now increase the oven temp to 250 degree C on grill mode. Brush a final layer of sauce and grill it for 1 min. This creates a beautiful caramelized texture over it.
  • Remove the tray from oven. Let it rest for 10 minutes before serving with your favorite dish.
