Peel and chop bottle gourd into a medium size pieces. Wash them well. Add them to a pot. Add in washed moong dal and cover it with water. Season with salt and mix well. Bring it to boil, simmer and cook for 15 to 20 mins till the dal is cooked.
Take grinding ingredients in a blender, add water and make into a smooth paste.
Add this to the dal mixture and mix well. Cook this for 5 mins.
Now make seasoning. Heat oil and crackle mustard and curry leaves. Pour this over the curry and mix well. Serve with rice.

Sorakkai/ Lauki has a mild sweetness, so adjusting salt and spice levels carefully ensures a well-balanced dish.
Cooking on a gentle flame allows all ingredients to blend well, making the kootu more flavorful.
Bottle gourd releases water while cooking, so adding too much water in the beginning can make the dish runny.
Check for bitterness in bottle gourd. Sometimes, bottle gourd can be slightly bitter. Taste a small piece before cooking to ensure its fresh and sweet.
If serving with rice, keep the kootu slightly thicker. If serving with chapati, a slightly thinner consistency works best.
