Spaghetti Aglio e olio is a popular Italian pasta dish made using good quality olive oil, garlic, red chilli flakes and parsley. This simple and classic Italian recipe uses the best ingredients to create most satisfying pasta dish made under 15 minutes. This has no heavy sauces and clearly focus on pasta and flavour comes from olive oil, garlic, coriander and chillies.

To Cook Pasta
150gramsSpaghetti
2litreWater
2tablespoonSalt
Instructions
Start by cooking the pasta. Because as you cook the pasta, you can start making the sauce side by side.
Bring lots of water in a sauce pan to a full boil. Once water starts to boil, drop the spaghetti in and immerse it into the boiling water. Cook for 6 to 7 minutes. You have to cook the pasta 2 minutes less than the package instructions. Because remaining 2 minutes the pasta will cook in the sauce.
Now take a saute pan. Don't place on heat yet, add in garlic, red chillies, coriander stem into the oil. Place the pan on low medium heat and fry the garlic and chillies until light golden in colour.
Now remove the coriander stem from the oil and discard it.
Take a ladleful (½ cup) of the starchy pasta water and pour it into the garlic chilli mixture. Use a spatula to mix the pasta water into the olive oil to emulsify the mix.
Now take the cooked pasta from the boiling water and drop it into the saute pan. Stir well using a tongs or spatula to coat the pasta in the emulsified sauce. You can add more pasta water if needed to create a sauce.
Now add in coriander leaves and mix once. switch off the flame. Serve immediately.
