Spicy bean soup is a warm and comforting soup perfect for chilled days. With just basic ingredients, the kidney bean soup can be made in no time. The kidney beans are simmered with onion, garlic, tomato puree, vegetable stock and results in an amazing flavour. This soup is perfect for those days when you want something easy, filling and delicious.
Heat olive oil in a pot. Add in onions and garlic and sauté for couple of mins.
Now add in spice powders and give a stir. Pour in tomato purée and cook for 5 minutes.
Add in kidney beans, salt, pepper, veg stock. Mix well and cook for 10 to 12 minutes of medium heat.
Now use an immersion blender to blend this soup until creamy and smooth. Add in coriander leaves and mix well.
Serve the soup with toasted bread.
Notes
If you prefer to keep the soup chunky, blend only halfway and leave the rest as it is.
You can also add fresh tomatoes instead of canned tomato puree.
At the end, add parsley or lemon juice for extra flavour.
Top the soup with bread crouton or corn chips for extra crunch.
You can add other vegetables like carrots, potatoes, corn, and capsicum for more nutritious soup.
Storage & Serving
Transfer the leftover soup to an airtight container and it stays well in the refrigerator for 3 to 5 days. Reheat the soup using a microwave. Serve this delicious and healthy kidney bean soup with toasted bread, sourdough bread, garlic bread, bread croutons or with a simple salad. It will make a hearty and comforting meal.
