- 10 Brinjal small variety
- 1 large Onion chopped
- 6 cloves Garlic peeled
- 2 tablespoon Tamarind
- 1 teaspoon Chilli Powder
- 1 tablespoon Coriander Powder
- 1 teaspoon Turmeric Powder / Manjal Podi
- 1 tablespoon Jaggery / Sugar
- Salt to taste
- For Roasting and Grinding:
- 2 Dry Red Chilli
- 2 tablespoon Coriander Seeds / Malli
- 1.5 tablespoon Channa Dal / Kadalai Paruppu
- 1.5 tablespoon Toor Dal / Tuvaram Paruppu
- ½ cup Coconut grated
- Salt to taste
- For Seasoning:
- 5 tablespoon Oil
- 1 teaspoon Mustard Seeds / Kaduku
- 1 teaspoon Cumin Seeds / Jeerakam
- 1 Dry Red Chilli
- 1 teaspoon Urad Dal / Ulundu Paruppu
- ¼ teaspoon Asafoetida / Hing / Kaya Podi
Dry roast the ingredients given for roasting till golden, take them in a blender add little salt. and grind them to a fine powder. Set aside.
Take brinjal cut them into four, stuff with the masala.
Heat oil in a pan, add in the seasoning ingredients and let them sizzle.
Now add in onion, garlic and saute them for a min with salt.
Add in the brinjal, chilli powder, coriander powder and turmeric powder. Toss well.
Add in salt and tamarind pulp. Add the leftover masala as well. Add in jaggery and cover with water as needed.
Cover the pot and let it simmer till it thickens and oil floats on top.
Serve.
