Taiwanese sticky rice also known as you fan or oil rice in Taiwan. It is a comforting and flavourful recipe made with sticky rice, mushrooms, shallots, and seasoned with soy sauce, hoisin sauce and sesame oil. The rice will be soft, chewy and absorbs all the rich umami flavour from the mushroom and vegetable stock.
Wash and soak sticky rice in water for 3 to 4 hours or overnight. Soak dried shiitake mushrooms in water for 1 hour. Strain the mushroom and cut into small pieces. Reserve the soaking liquid as it is packed with umami flavour.
Heat sesame oil in a pan, add in shallots, mushrooms and saute for 2 minutes. Add in carrots, and mix well. Then add in strained sticky rice and stir fry for 4 to 5 minutes. Now add in hoisin sauce, soy sauce, vinegar, salt, sugar and pepper. Toss it well and fry the rice in the flavoured oil for 4 to 5 minutes.
Pour in mushroom stock, vegetable stock. Mix and cook until the rice absorbs all the liquid.
Now transfer this to a parchment lined steamer basket. Spread evenly and make multiple holes in between. Place this on a steamer and steam cook for 40 minutes to 1 hour. Make sure to flip them in between for even cooking of the rice. Taste and check whether the rice is cooked completely.
Garnish with spring onions and enjoy.
