Tirunelveli Halwa Recipe, also known as Godhumai halwa, wheat halwa is one of the popular halwa recipe from Tirunelveli. It is made using wheat, sugar and ghee which comes together to a glassy textured halwa.
Soak wheat rava in water for 1 hour. Strain and take it in a blender, puree till smooth. Now strain this through a sieve and extract as much milk as possible.
Take this milk in a bowl. Now set this milk aside for 30 minutes to 1 hour undisturbed. You will see water collected on top. Now discard the top liquid. Add 2 cups of water to the milk and mix well.
Take ½ cup sugar in a pot in which you are making halwa. Now cook the ½ cup sugar till dark caramel is achieved.
Reduce the flame to low. Now add in 21/2 cup sugar and 1 cup of water into the caramel and mix well. It will get hard at first, then as you mix it will melt and become like a liquid.
Pour the wheat milk to this and mix well. Keep cooking till it gets thick. At this point start adding ghee a spoonful at a time. Mix well.
Keep cooking till ghee separates. It will take around 45 mins to 1 hour. Add ghee little at a time and continue cooking. You will see the halwa leaving the sides of the pan. Add in cashews and mix well.
Serve.
