Herb Butter Roast Chicken Recipe
Delicious roast chicken with butter, herbs and garlic. This chicken is roasted in oven with skins to create a crispy chicken with roast potatoes.

Ingredients
▢
Whole Chicken with skin - about 3 pounds
▢
Onion - 1 chopped with skins on
▢
Garlic - 1 whole bulb cut in half
▢
Lemon - 1 cut in half
▢
Potatoes - 4 to 5 cut into chunks
▢
Onion - 2 cut into thick slices
▢
For Herb Butter:
▢
Butter - ½ cup
▢
Garlic - 3 cloves grated
▢
Paprika - 1 tsp
▢
Oregano - 1 tsp
▢
Rosemary - 1 tblspn
▢
Fresh Parsley - 3 tblspn chopped finely
▢
Salt to taste

Pepper to taste
Instructions
▢
Preheat oven to 200 degree C. Take a baking pan and place onion slices over it. Set aside.

Mix all the herb butter ingredients together and set aside.
▢
Take chicken and use your fingers to separate the skins from it.
▢
Now put half of the herb butter in and massage it all over it so it spread evenly.
▢
Now put onions, lemons, garlic inside the cavity of the chicken. Place the chicken over the bed of onions.
▢
Now place the remaining butter over it and spread evenly.
▢
Now tie the legs with a thread and place the potatoes around the chicken and pop it into the oven and bake for 1 hour and 30 mins.
▢
Remove it from oven half way through the cooking time and take the juices from the pan and pour it over the chicken. do this two times.
▢
Now remove it from oven and set aside for 20 mins.
▢
Now slice and serve.
