Ingredients

  • Barbeque Sauce - 1 cup
  • Boneless Skinless Chicken Thighs - 5
  • Dinner Rolls / Buns - 5
  • Oil as needed
  • For Dry Rub:
  • Onion Powder - 2 tsp
  • Sugar - 2 tsp
  • Garlic Powder - 2 tsp
  • Black Pepper Powder - 1 tsp
  • Chilli Powder - 1 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1 tsp
  • Salt to taste
  • For Spicy Pickle:
  • Gherkins / Dill - 1 cup chopped
  • Sugar - 3 tblspn
  • Red Chilli Flakes - 1 tsp
  • Red Chilli Sauce / Hot Sauce - 1 tsp
  • Garlic - 2 cloves chopped finely

Instructions

  • Start by making the pickle. Take all the ingredients in a bowl and mix well. Set aside so the flavour deepens.
  • Now mix all the ingredients for the dry rub and set aside. Take chicken and coat it with the rub.
  • Heat a grill pan till smoking hot. Apply little oil over it. Now place the chicken over it and grill till it is cooked on both sides, reaching an internal temperature of 170°. Remove to a plate.
  • Now take each chicken and dip it in the barbeque sauce.
  • Toast some dinner rolls in a pan, place the chicken over it and spoon the pickle over it.
  • Cover it and serve.
